Celeste’s Slow Roasted Garlic
1 or more whole garlic bulbs
Extra virgin olive oil
Salt and pepper to taste
Preheat oven to 375 degrees.
Peel the outer skin of the garlic, leaving the bulb whole. Slice 1/2-inch of the pointed end of the bulb to expose the top of the cloves. Place each bulb in a garlic roaster or a muffin pan. Top each bulb with a teaspoon of olive oil, rub it into the cloves and allow it to soak.
Cover and bake 1 hour or until cloves are browned at the exposed end and soft throughout. Remove from oven.
Allow garlic to cool and remove cloves from head as needed. Crush garlic cloves with the flat of a knife.
Garlic may be spread over crackers or bread.
